The new school year has been keeping me busy, but this dinner was a must-share! It was a (mostly) one-sheet sheet meal. I baked chicken thighs with string beans, yellow and red grape tomatoes, garlic and sliced lemons at 400 degrees F for 35 minutes. I seasoned the chicken thighs pre-bake with salt, black pepper, garlic powder, onion powder, cumin and paprika, then a quick spray of olive oil spray. It came out absolutely delicious and was SO easy. The tomatoes and string beans are from our garden, which was super exciting. I paired this with arugula dresses with olive oil, pomegranate molasses, and a little pink salt. This is really a must-try! The tomatoes and lemon cooked into the delicious sauce for the chicken. Finally got to try aleiasgf crispy coat and bake mix for chicken and my world is CHANGED! I absolutely love my classic chicken cutlet recipe from my family, but I’ve been having a hard time getting the crumbs to stick when I try to make it gluten free. This mix stuck beautifully to the chicken, got super crispy, and was delicious!! I was planning on just eating them as cutlets until my genius husband said we should make chicken cutlet sandwiches! Tonight’s dinner was sweet potato stuffed with pesto chicken! Okay, WHO has tried to make pesto out of PURPLE basil? I tried it tonight and - first of all, it was delicious - but it eventually turned green! It was so cool to see. This combo was amazing and definitely entering into our rotation of go-to dinners! I wrapped the sweet potatoes in foil and baked them at 400 for 60-75 mins depending on the size. I baked chicken breasts with some salt, pepper, onion powder and olive oil spray at 400 for an hour. I blended purple basil, pine nuts, extra virgin olive oil, followyourheart vegan parm, and nutritional yeast in a food processor. After the chicken was done I chopped it into small pieces and mixed it with the pesto, then topped it over the split sweet potatoes!
