The new school year has been keeping me busy, but this dinner was a must-share! It was a (mostly) one-sheet sheet meal. I baked chicken thighs with string beans, yellow and red grape tomatoes, garlic and sliced lemons at 400 degrees F for 35 minutes. I seasoned the chicken thighs pre-bake with salt, black pepper, garlic powder, onion powder, cumin and paprika, then a quick spray of olive oil spray. It came out absolutely delicious and was SO easy. The tomatoes and string beans are from our garden, which was super exciting. I paired this with arugula dresses with olive oil, pomegranate molasses, and a little pink salt. This is really a must-try! The tomatoes and lemon cooked into the delicious sauce for the chicken. I can’t wait to make this again!
