Our "Grandma Walking Through the Forest" pasta is a cappelletti verdi with roasted leek and black mushroom puree.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It's inspired by the nonnas in the Romagna region, where Cappelletti comes from. At many Sunday dinners that Chef Stefano attended in Italy, local nonnas (or nonne) would serve braised leeks as an antipasto, inspiring the filling.
