Who doesn't like a cobb salad??? It's such a yummy filling lunch that's always got me wondering why I don't eat them as often. I like adding some avo to mine and using a vinaigrette rather than a creamy dressing. I made this one big enough to split with another person because salads are for sharing unlike ice cream...I added some fresh dill to the dressing this time since I had some handy and it paired perfectly with the hard boiled eggs! Ingredients Romaine lettuce Arugula Baby Spinach 1/3 of a cubed cucumber A handful of halved grape tomatoes 2 sliced hard boiled eggs 3 strips of crumbled bacon 1 diced avocado Dressing 2 tablespoons of olive oil The juice of 1 lemon 1 teaspoon of red wine vinegar 1 teaspoon of chopped dill 1 teaspoons of garlic powder 1 pinch of Salt & Pepper Directions In a large bowl add all your leafy greens . In a separate bowl combine all the ingredients to make the dressing and whisk together until its emulsified. Add half of the dressing to the bowl of leafy greens and toss together to coat all the leafs with dressing. Plate the greens in a large plate or bowl and disperse the eggs, cucumbers, tomatoes, bacon and avocado over the top. Drizzle the remaining of the dressing and enjoy over the top of the the salad and enjoy!
