Good eating doesn’t have to be difficult with this easy, fast and delicious recipe. We smoked this tri tip on the Kamado Joe using the Joetisserie for a perfect, even cook and finished it with a chimichurri sauce. Full recipe below ⬇️ ⠀⠀ Tri-Tip: -Allow meat to reach room temp -Rub all sides with olive oil -Apply generous amount of spice rub of your choosing (we used John Henry’s Texas Brisket Rub) -Attach to rotisserie Cook with lid closed at 400 degrees for 20-25 minutes for medium rare (125-130 internal temp). Allow meat to rest 5-10 minutes before slicing. ⠀⠀ Chimichurri Sauce: - 1/4 C fresh parsley leaves - 3 TBS red wine vinegar - 4 garlic cloves - 2 TBS oregano leaves - 1 TSP crushed red pepper - Salt/Pepper - 1/2 C Olive oil Place parsley, RWV, garlic, oregano, and crushed red pepper in food processor. Pulse until mixture is coarsely chopped. Remove mixture into bowl. Add salt/pepper. Stir in olive oil.
